Coffee pot descaling: how scale makes your coffee bitter

Descaling a coffee pot takes half an hour: run a citric-acid-based descaler through the machine, then rinse with two cycles of fresh water. It is worth the effort limescale is one of the most common reasons coffee turns bitter.

To descale coffee machine equipment properly: empty the machine, run a descaling cycle with a citric-acid-based coffee pot descaling solution as your manufacturer's manual specifies, then rinse thoroughly with at least two cycles of fresh water before the next brew. That restores the machine. The more interesting question is what the scale was doing to your coffee.

Limescale works against a good cup twice. Inside the machine, scale coats the heating element and insulates it the water no longer reaches the intended brewing temperature, extraction drifts, and drift toward over-extraction tastes bitter. In the water itself, carbonate hardness buffers the coffee's natural acids: the bright notes get neutralised, and what remains tastes flat and harsh rather than balanced. 

Honesty about the variables: water is not the only one. Grind size, dose, freshness of the beans and contact time all shape the cup a perfect water can't rescue a stale bean. But water is the variable most people never look at, and in hard-water regions it quietly works against every other improvement you make.

Bitter or sour? Diagnosing the cup

When coffee tastes bitter, the usual cause is over-extraction too much heat, too fine a grind, too long a contact time; scale-distorted temperature belongs on that list. Sour is the opposite signal: under-extraction. The bitter vs sour distinction is the fastest diagnostic there is bitter says "take energy out of the brew", sour says "put more in".

Is coffee acidic and why balance matters

Yes, and by design: coffee's acids carry its liveliness. Is coffee acidic to a problematic degree? For most people, no a brewed cup sits around pH 5, milder than most fruit juice. The point for taste: carbonate-rich water neutralises these acids in the cup, which is why the same beans can taste vivid in one town and dull in another.

What is crema and what does water have to do with it?

Crema is the golden-brown foam on an espresso CO₂ from freshly roasted beans, emulsified oils and fine bubbles, stabilised during extraction. Coffee espresso crema quality depends on bean freshness, pressure and temperature and temperature is exactly where scale interferes. A descaled machine holds its profile; a scaled one drifts.

Temperature and ratio: the two numbers worth knowing

The sweet spot for coffee water temperature sits between roughly 92 and 96 °C hot enough to extract, cool enough not to scorch. Filter coffee forgives more than espresso, but no method forgives a heating element wrapped in scale. Ratio comes next see the FAQ below.
